Winner Winner Chicken Dinner

We often will stop at Costco for one of their whole roasted chickens.  They are very tasty no doubt about it.  But I have to think they are full of things that may be less than good for us.  There was a time when I always roasted my own chicken but haven't for years until recently we enjoyed a meal with friends where roast chicken was served.  Since that time I committed to doing my own chicken.  And the results have been just as good as Costco and I know better for us.  And to be honest way too simple not to always do it myself!
Start with a nice plump chicken
Clean it up and pat it dry
Give it a nice rub of olive oil and your favorite savory spices
Bake it at 375 for about 1 hour and 15 minutes
You'll know when it is done, the juices will run clear.
And this my friends is what you will have!
A beautiful golden chicken of goodness!

Love the roasted chicken! I use one of those upright roasters and it comes our beautifully browned on all sides. With roasted potatoes of course :-)

There is a great roast chicken recipe in that heart healthy cookbook I sent you awhile back. You make a rub of lemon zest and herbs and rub it under the skin. So good!
