Mostly I like spinach steamed just tender with a nice splash of red-wine vinegar. But sometimes I like to change things up and so I did. This is my version spinach salad using just what I had on hand.  Not only did it taste terrific but we were eating 30 minutes after we got home!!  Love that part!

Roasted Chicken (from Sunday's dinner)
Purple Onion
Toast Almonds in Sugar
Dressed with Marie's Coleslaw Dressing (it's what I had)
If I had had feta cheese I would have thrown it in as well!!
