I have a circle of friends. I remember my very first friend, her name was Beverly Crossfield. I'm not sure where she is today. But I think of her from time to time. Our friendship started when we were probably three or four. Crazy that I would remember her but I do. Fast forward to today and over the years my circle of friends has grown and grown. Many friends have passed through my life much like Beverly never to be seen or heard from again. I'm not saddened by that, as the memories and the things I've learned and gained from these friends have become part of me.

Candy
I have a sweet tooth sometimes. Sometimes more than I want to have one. I was thinking about what I would consider my favorite candy bar. I know there must be many but for some reason the only one I can think of at this very moment in time is this one:
There is just something about the soft fluffy middle that I just love. There are others I love but I think this one today and in years past has always been my number one favorite!

Tender Spot
Yesterday, April 27th was the anniversary of Lola's death. Not necessarily my favorite time to remember but when it happened a friend shared this: When C.S. Lewis lost his wife, Joy, he wrote "the pain now is part of the happiness then..." She was a happy, happy dog. She made me happy. I think of her a lot and that is my favorite part. My memory of her.

Driving The Hill
Now that I'm a solo driver I've gained a different appreciate for the hill. And I've decided my favorite way to drive it is when no one else is driving on it with me. It does and can happen. Like yesterday morning. Well for most of the ride up and over I was the only one headed to the other side. It is not my favorite when someone is pushing behind me; there aren't many passing lanes. But then it isn't great fun being behind a first timer. Sorry but first timers shouldn't be on the hill during commute time..........just sayin'!

More New Favorite Goodness
Chocolate - Peanut Butter Grahamwiches
(Courtesy of The Biggest Loser Family Cookbook)
Whole Chocolate Graham Crackers
Reduced-Fat Peanut Butter
Frozen Fat-Free Whipped Topping, thawed
Break each graham cracker in half. Spread a teaspoon of peanut butter evenly over the inside of half the graham cracker. Spread 2 tablespoons whipped topping evenly on the other half of the graham cracker. Take the peanut butter half and place on top of the whipped topping half. Place your "grahamwiches" in the freezer in an airtight container. Freeze for about 2 hours or up to 1 month. Serve frozen.
My variation:
I used regular graham crackers, since I couldn't find the chocolate ones.
I also tried the Nutella and peanut butter combination, it was lovely!

New Favorite Goodness
I'm always looking for tasty good things to prepare. Trying to do more fresh ingredient cooking. More scratch stuff. Well my boss has been eating this concoction for breakfast that just looks so tasty to me and apparently this concoction has been around forever. But it is new to me. It's called Joe's Special. Fixed it Saturday morning and well, it is my new favorite breakfast food. And pretty healthy I would say. I made it with turkey. Very yummy and I suspect it will make for great leftovers. Leftovers another favorite!
• 1 tablespoons olive or vegetable oil
• 1 tablespoon butter
• Splash or two of Tabasco or other hot pepper sauce
• 1 pounds lean ground beef or ground turkey
• 1 medium onions, finely chopped
• 2 garlic cloves, finely minced
• 1/2 pound mushrooms, chopped
• 3/4 teaspoons salt
• 1/4 teaspoon ground nutmeg
• 1/4 teaspoon dry oregano
• 1/4 teaspoon pepper
• 3/4 to 1 pound fresh spinach, trimmed of stems and chopped, or one 10-ounce package frozen chopped spinach, thawed and drained
• 6 large eggs, lightly beaten
• Freshly grated Parmesan cheese, as desired (and who doesn't desire that?)
Preparation:
Crack the eggs into a small bowl and add the Tabasco, salt, oregano, nutmeg and pepper. Whisk just enough to combine. Set aside.
Warm the oil and butter in a large skillet over medium heat until the butter melts. Add the onion and sauté until soft but not beginning to brown, about 4 minutes. Add the ground beef (or turkey) and continue cooking until uniformly brown, breaking the meat into small pieces as it cooks. Add garlic. Stir in mushrooms and cook for about 2 minutes. Cover with the spinach, place a lid over the mixture, and cook for about 3 minutes, just until the spinach wilts. (If using frozen spinach, cook, covered, for 1 minute, just to take off its raw edge.)
Stir the spinach into the meat, cooking briefly to eliminate excess liquid if the mixture seems watery. Pour the egg mixture over all, stirring with a spatula from the bottom until the eggs begin to set. Remove from the heat and stir a few more times, as the eggs cook through from the residual heat. At this point add the freshly grated Parmesan cheese and combine into mixture. Also, top each serving with the Parmesan cheese. Serve and enjoy!

Ask Me Anything
Life is full of questions. The month of April has been full of questions it seems. Many of the answers have come from quiet contemplation. When I'm still and listen thoughtfully the answers always come. This I can count on.
But there are other kinds of questions in life. I call them my encyclopedia type questions and when I don’t know the answer to those questions I know who does. I know Google knows. Go ahead ask it anything it just knows.

Kid's Say
I have to say I think the things kid's say are one of my favorite things. They crack me up. Recently Gran-daughter 3 told me she had a dark side and couldn't have any candy. Really, a dark side?
Interesting. The truth of the matter is the girl has a cavity. At the dentist office she was told she had a dark spot on her tooth which has translated to her as a dark side. It is my favorite thing to hear her talk about, her dark side. I can't stop laughing about it and visualizing her serious look when she talks about this dark side of hers. Grans they say my favorite things.

Coming and Going
My favorite thing is the going, the visiting, the seeing! I do have a lot of favorite things. Most are just simple delights of living. Nothing fancy. Nothing earth shattering. But there is one thing that is just really not my favorite after all the going, the visiting, the seeing and that is the leaving. Leaving is just not my favorite thing. I guess not everything can be a favorite!

Thursday
My favorite day of the week is Thursday. The reason is because it reminds me of Christmas Eve. For me Christmas Eve is about anticipation and about hope for the grand holiday Christmas itself. Well, Thursday is like that to me only on a weekly basis. Thursday, the eve of great things to come. And that is why Thursday is my favorite day!

At the Movies
There are certain lines from the movies that are just my favorite. I love that sometimes these lines, which are stored away deep inside my brain, know when to come back to me at just the right moment. One that has been particularly useful as of late is "clear the mechanism." It's my favorite line. Because sometimes you just have to clear your mind and move on. It is so freeing. Shopping
Growing up the favorite thing to do on the weekends with my mom, my aunt and my cousin was to head to Sacramento for a day of fun shopping. The mother’s would go one way and my cousin and I would go another way. We would meet up several hours later, amazing we could do that, no phones, no worries. I don’t remember big purchases just the joy of looking and looking and looking. I don’t even remember trying on clothes. My mom was a seamstress so all my clothes we made especially for me. I loved it that way. Now shoes that was another story I’m pretty sure that shoes were always tried on. Shopping then was so different than shopping now. My favorite place to shop, my favorite way to shop hands down is here! It doesn’t get better than that. Order it one day and it is here the next. Okay sometimes I have to wait two days. But no leaving the house. I can shop and watch a movie. I can shop in the middle of the night. I can shop in my pajamas. Simply my favorite way to shop.

Pick a Color
My favorite colors when I was a child were green and yellow. Green being the number one favorite. But today, although I love those two colors my new favorite color is red. It can be no other way. Red is who I am!
